A few Edubuntu updates

As Edubuntu's raspberry pi image still relies on Ubiquity (as does
Ubuntu Desktop), we wanted to generify and remove the version reference.
Additionally we want to future proof it a little more as the website
evolves from a placeholder to a full-fledged website in the future.

This is mostly just in case some necessary MPs and PRs don't land for
the pi images in time for the new installer to be used. We have arm64
builds of edubuntu-desktop-installer but we need the desktop team to
take the lead here. :)
