Matt, now I found it: It seems that your printer is not a PostScript printer but system-config-printer has assigned the PPD file for its bigger Brother (which is a PostScript printer) to it.
One question: Did you have to go to manufacturer/model/driver selection screens when setting up your print queue or after pluygging the printer to the USB?

This printer is not supported by the standard Ubuntu installation. You need to get the Epson driver as described on http:// ubuntuforums. org/showthread. php?t=973233.
